With the celebrations of the Royal Wedding the town came alive with excitement, party planning and bunting! Street parties lined many roads throughout Windsor and Eton, and union jack bunting appeared everywhere! (Lots of which were purchased from Cocoa Bean!) We even got treated to some decoration from the council down St Leonards Road – It looked fab! Unfortunately now that the celebrations are over the bunting has been taken away! We think it should be a permanent feature on St Leonards Road, with gorgeous independent shops and deli’s, colourful bunting over our heads would best reflect what St Leonards Road is all about! Sarah (owner) and her family have flown off to the land of Cocoa bean plantations, where Sarah’s ancestors once made their livings, in St Lucia (read more). Over there they are spending time helping at the only orphanage on the island, and at the disabled school out there. This is ultimately my favourite pancake! The addition of the cinnamon-vanilla butter makes these already amazing pancakes extra special. Absolutely delicious! Yum!! Ingredients: 1-1/2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg, lightly beaten
1-1/4 cups fat-free milk
3 medium ripe bananas, mashed
1 teaspoon vanilla extract
1-1/2 cups fresh or frozen blueberries (If using frozen blueberries, do not thaw)
Maple syrup, optional
Powdered sugar, optional Cinnamon-Vanilla Butter: 1/4 cup unsalted butter, softened
1/2 teaspoon cinnamon
1/4 teaspoon vanilla extract Directions:
